Just a few pics from the trip. It went very well. We packed a lot into a few days, so it was a bit exhausting, but a blast.

Here it is:
cook white rice - let it cool
scramble egg (I use a few) in some oil (similar to when you do Pad Thai)
Add desired diced veggies. (green pepper, mushrooms, onion)and saute
Add cooled rice (and more oil if needed-usually) and mix well.
Add lots of soy sauce until you reach soy heaven (or 'desired taste')
I'll add leftover chicken or pork to it too sometimes.
I use a big ol deep skillet, but have used everything from a regular pot, to a chilli pot...whatever you can find that will hold it all!
That's it...hope it turns out..I've kinda tweeked it, so it's a bit an 'of the moment' recipe....hope it turns out.
